Dinner this week

Since I have so much time to cook now, I've decided to log what we're having. Maybe you'll get some new ideas and hopefully I'll be able to keep track of recipes that I love. Plus, hopefully it will help us cut back on our food spending.

Sunday: Chili
Josh uses the recipe on the back of the McCormick spice packet plus sauteed veggies

Monday: Mac & Cheese (topped with leftover Chili)
Reduce milt to 1 cup (maybe 1.5 cups)

Tuesday: Mediterranean Orzo (my own recipe. Usually what's in the fridge.)
Saute oven roasted red pepper, onion, spinach, pine nuts. Cook orzo. Toss veggies with orzo, feta, parmesan, and homemade pesto. 
Winning meal this week!!

Wednesday: Roasted Chicken (on sale at Whole Foods) and roasted veggies

Thursday: Mushroom & Spinach Risotto
Cleaning out the fridge. I love risotto, but hate standing around stirring every few minutes

Friday & Saturday we eat out. :) Sounds like pizza is on the menu this weekend!


  1. Sounds yummy! I make a similar Orzo meal, but with uncooked veggies, kalamata olives, and a vinaigrette--served cold of course. It's one of those that gets better the longer it sits in the fridge. As for the Risotto, I make this a lot because my kids love it (all varieties) and I usually sit on my kitchen island and read a book while I'm cooking it so I don't forget about it! :)

  2. Thank you for your menu! What a huge help, and I have had a box of Orzo sitting around while I have wondered why I bought it and what to do with it! Do you have a Trader Joes in your area? They are fantasic with their afternoon samples for dinner ideas. And, you just pick everything up by the sample table. Very quick. Very easy. Please keep the weekly menu coming!
