Since I have so much time to cook now, I've decided to log what we're having. Maybe you'll get some new ideas and hopefully I'll be able to keep track of recipes that I love. Plus, hopefully it will help us cut back on our food spending.
Josh uses the recipe on the back of the McCormick spice packet plus sauteed veggies
Monday: Mac & Cheese (topped with leftover Chili)
Reduce milt to 1 cup (maybe 1.5 cups)
Tuesday: Mediterranean Orzo (my own recipe. Usually what's in the fridge.)
Saute oven roasted red pepper, onion, spinach, pine nuts. Cook orzo. Toss veggies with orzo, feta, parmesan, and homemade pesto.
Winning meal this week!!
Wednesday: Roasted Chicken (on sale at Whole Foods) and roasted veggies
Thursday: Mushroom & Spinach Risotto
Cleaning out the fridge. I love risotto, but hate standing around stirring every few minutes
Friday & Saturday we eat out. :) Sounds like pizza is on the menu this weekend!
